1 pound medium scallops
10 ounces applewood smoked bacon
¼ cup dark brown sugar
â…› teaspoon cayenne pepper
2 tablespoons honey
½ tablespoon water

Preparation
Preheat oven to 400℉. Line a baking tray with aluminum foil and lightly spray with cooking spray.Â
Cut the bacon strips into thirds. Wrap a piece of cut bacon around each scallop and secure with a toothpick. Place wrapped scalloped on the baking tray.
In a small bowl, combine the brown sugar and cayenne pepper. Mix well.
Add honey and mix until a thick paste forms. Pour in water and mix again until smooth.
Use a basting brush to base the sugar-honey mixture over the bacon.
Bake the wrapped scallops in the preheated oven for 15-20 minutes, or until the bacon is browned and the scallops are opaque.
Remove from the baking tray immediately and serve while hot. Enjoy!
