Bacon Wrapped Scallops

Ingredients

  • 1 pound medium scallops

  • 10 ounces applewood smoked bacon

  • ¼ cup dark brown sugar

  • â…› teaspoon cayenne pepper

  • 2 tablespoons honey

  • ½ tablespoon water

Preparation

  1. Preheat oven to 400℉. Line a baking tray with aluminum foil and lightly spray with cooking spray. 

  2. Cut the bacon strips into thirds. Wrap a piece of cut bacon around each scallop and secure with a toothpick. Place wrapped scalloped on the baking tray.

  3. In a small bowl, combine the brown sugar and cayenne pepper. Mix well.

  4. Add honey and mix until a thick paste forms. Pour in water and mix again until smooth.

  5. Use a basting brush to base the sugar-honey mixture over the bacon.

  6. Bake the wrapped scallops in the preheated oven for 15-20 minutes, or until the bacon is browned and the scallops are opaque.

  7. Remove from the baking tray immediately and serve while hot. Enjoy!
